If you're a tofu fan but not a fan of shirataki's texture, try using shredded yuba, or tofu skin, as a pasta substitute. The thin skin is taken from the top of heated soy milk during the tofu-making process. Each serving of yuba is around 150 calories while also being a great source of protein.
