These Asian staples aren't just for noodle soups. Soba noodles cook fast and, since they are made from buckwheat, are gluten-free and contain little fat. They are also a good source of fiber and heart-healthy nutrients like flavonoids and magnesium. Use them as a substitute for any spaghetti dish and you won't know the difference; while not a low-carb substitute, they are a good alternative for the gluten-intolerant or someone looking to add more fiber to their diet.
