Mexican Raw Bulgur Bowl

Ingredients

  1. 1/4 C bulgur (uncooked)
    1/4 C water
    2 T salsa
    1/2 avocado, diced
    1 T fresh cilantro
    S+P, to taste

Directions

  1. Combine the bulgur and water in a bowl.  Let stand for 15 mins.
  2. Fluff with fork.  Top with salsa, avocado, and cilantro.  Season with salt and pepper as needed.
  3. Enjoy!
