Here is a healthy twist on an usually deep fried treat. This dish takes advantage of delicious Summer sweet corn, avocados, and fresh cilantro. This dish is both filling and delicious. Worth the effort!

Ingredients (makes 8-10 fritters):
4 ears of fresh corn, shucked, and cleaned
1 jalapeno, seeded, diced, and divided
1 medium onion, minced
4 cloves of garlic, minced
4 tbsp fresh cilantro, washed, chopped, and divided
1/2 cup whole wheat flour
2 eggs, lightly beaten
1/2 cup whole wheat breadcrumbs
1 tbsp black pepper
3 tbsp extra virgin olive oil
1 medium avocado, pitted, and diced
1/2 lime, juiced
Sriracha sauce (optional)
