Recipe For Carrot Sesame Salad From Martha Stewart

Make This: Carrot Sesame Salad

Check out this recipe for a carrot salad that FitSugar user wiggle shared in our Healthy Recipe community group.

This is so easy to make if you have a food processor. I use "seasoned" rice vinegar since it has a little sugar and salt added to it. If the salad feels too dry, add more sesame oil to the mix.

Carrot Sesame Salad

  1. 1 pound (5 to 6 medium) carrots, peeled and coarsely grated
  2. 2 tablespoons sesame seeds
  3. 1 to 2 tablespoons rice vinegar
  4. 1 tablespoon toasted sesame oil
  5. 1 piece (1 inch) fresh ginger, peeled and finely chopped (about 2 tablespoons)
  6. Coarse salt and ground pepper

In a large bowl, combine carrots, sesame seeds, vinegar, oil, and ginger. Season with salt and pepper; toss to combine. Salad can be served immediately or refrigerated up to 2 days and served chilled.
