Ingredients

  1. *4 ripe avocados, peeled and pitted
  2. *juice from 1 lime
  3. *1 jalapeño pepper, minced and seeds removed
  4. *1 tsp minced ginger
  5. *1 tsp chopped lemongrass
  6. *2 cloves garlic, minced
  7. *spices to taste: coriander, curry powder, salt
  8. *1 cup cilantro, roughly chopped

Directions

Cut up avocados. Add lime juice, jalapenos, ginger, lemongrass, garlic and seasonings to avocado. Mash together. Stir in cilantro.

Serve with tortilla chips or rice crackers (*best with Lundberg Lime Rice Chips!)

6-8 appetizer servings
