Very healthy vegan yummy pancakes

Ingredients

  1. 1 cup unsweetened soy milk
    1 1/4 cups oats
    1 tablespoon gluten-free flour
    2 teaspoons flax seeds
    1/4 teaspoon salt
    1 teaspoon olive oil

Directions

Measure out all the ingredients and add them to a blender (I first used a mixer, and my kitchen was covered in soy milk, haha). Blend together for about 60 seconds. Heat the teaspoon of olive oil on a non-stick pancake pan and add 1/3 of the mixture.

After one minute, flip pancake over to other side. After one minute flip over again; it should be a golden-brown color. Do the same with the rest of the batter and voila! Healthy, vegan, gluten-free, and filling pancakes. I enjoyed mine with one tablespoon of low-fat cottage cheese and three tomato slices (I stacked the two pancakes like a sandwich), but I think they can go with anything!
