Waldorf Salad

  1. 1/2 cup chopped, slightly toasted walnuts
    1/2 cup celery, thinly sliced
    1/2 cup red seedless grapes, sliced
    1 sweet apple, cored and chopped
    3 tablespoons plain nonfat yogurt
    1 tablespoon fresh lemon juice
    Butter lettuce leaves for garnish


  1. In a medium sized bowl, whisk together the yogurt and the lemon juice, then add 1/2 teaspoon of salt and freshly ground pepper to taste.
  2. Mix in the apple, celery, grapes, and walnuts. Serve on a bed of fresh lettuce.
