Day 5 Lunch: Black Bean Burger + Corn Salad

Prep Notes:

  • Gently thaw one black bean burger you made and froze on Day 1.

      • 1 black bean burger, thawed
      • 1/2 cup cooked corn
      • 1/2 cup chopped tomato
      • 2 teaspoons olive oil
      • 1 teaspoon lemon juice
      • 1/4 teaspoon chili powder
      • 1/8 teaspoon kosher salt
      • 2 cups chopped bibb or romaine lettuce leaves


      1. Heat the black bean burger in the microwave for 1 minute, if desired, to heat through. Cut burger into bite-size pieces.

      2. Toss the corn and tomato together. Whisk lemon juice, chili powder, and salt together. Top lettuce with veggie burger and corn-tomato mixture, and drizzle with dressing.
