In what seems to be the outcome of a Trader Joe's product name generator, the beloved grocery chain has begun selling riced cauliflower and butternut squash risotto [1]. The cozy, seasonal dish is the latest item to come out of Trader Joe's ongoing cauliflower craze [2], which arguably began with its wildly popular cauliflower pizza crust [3] in 2017.
Though the name pretty much covers it all, the dish also consists of carrots, garlic, and cheese, all of which are glazed in an herbed butter sauce. As a heads up, because of its decidedly Fall flavors and ingredients, the riced cauliflower and butternut squash risotto will only be available for a limited time for $4 per each 16-ounce bag.
