While devouring a chocolate mint brownie at my local vegan bakery, I had an epiphany: why have I never created this perfect flavor combination in oatmeal form? And boom — this recipe for mint chocolate chip overnight oats was born.

Offering over 21 grams of hunger-satiating protein and more than eight grams of filling fiber, you'll not only satisfy your chocolate cravings but you'll stay full and energetic for hours. If you have fresh mint leaves, you can add them for extra fresh flavor, but if not, peppermint extract works perfectly.

High-Protein Mint Chocolate Chip Overnight Oats

INGREDIENTS

    • 1/2 cup rolled oats
    • 1 teaspoon chia seeds
    • 3/4 cup unsweetened nondairy milk (I used Ripple)
    • 1/2 serving chocolate plant-based protein powder (I used 22 grams of Vega Performance Protein, which was 15 grams of protein)
    • 1/2 teaspoon cocoa powder
    • 1 tablespoon maple syrup
    • 1/8 teaspoon peppermint extract
    • 1 teaspoon vegan chocolate chips
    • 3 mint leaves, chopped (optional)

    INSTRUCTIONS

    1. Add all the ingredients (except for the chocolate chips) to a mason jar or bowl and stir until thoroughly mixed.

    2. Pop it in the fridge overnight.

    3. In the morning, sprinkle on the chocolate chips and enjoy.
