Every time I want to make fajitas something makes me change my mind. Last week I bought some things to make chicken fajitas. Well friends showed up unexpectantly and I didnt want to be standing and cooking forever so I made a mexican type lasagna. It was really good. I used tortillas instead of noodles. Used refried beans like you would use the ricotta mixture and put in chopped chicken breast that was coated with Fajita seasonings, chopped tomatoes corn and black beans, extra sharp cheddar and mozzarella cheeses. All in layers like a lasagna. Cooked in the oven on 375 for about 45 min. Fast and easy. I made yellow rice on the side.
