Artisanal coffees turned instant? It sounds almost too good to be true, but one San Francisco start-up called Sudden Coffee [2] is doing just that. The company first selects single-origin beans, lightly roasts them, and hand-brews the coffee before crystalizing and packaging it. According to the website, Sudden Coffee's specific dehydration process "preserve[s] all the sweetness and complexity while minimizing bitterness." Here's the exciting part: the instant coffee can be mixed with hot or cold water or straight into milk. Now, how much will this set you back? The baseline subscription is $24 a month for eight cups of coffee, so $3 a cup. To price compare, most craft coffee shops in San Francisco charge about $2 for drip coffee. Starbucks Via instant coffees are around 83 cents per cup. Is that extra dollar or two worth it for hand-crafted, artisanal instant coffee? Weigh in with the poll below!

According to @livestrong_com, one of instant coffee's pitfalls is its "bitter taste." They've clearly never tried #SuddenCoffee [3]
