Back of Avocado Makes Its Way to Dessert Everyone knows I am crazy for popsicles — there's no better way to beat the heat on a Summer day. Although avocado is generally used in savory dishes like guacamole, it is a fruit and therefore is perfect for dessert! These avocado coconut creamsicles are surprisingly delicious and decadent. The avocado, coconut milk, and cream freeze to an exceptionally smooth texture. Because the nutty flavor is incredibly rich and exceptionally filling, a little goes a long way, and next time, I will use a smaller popsicle mold. Avocado Coconut Popsicle From Lauren Hendrickson, POPSUGAR Food Ingredients1 large avocado 1/4 cup coconut milk 1/4 cup cream 1/4 cup sugar pinch of salt Directions Using a hand mixer, blend all of the ingredients until creamy. Fill popsicle molds with the avocado mixture and place in the freezer for at least 5 hours. Enjoy the popsicles. Makes 4-6 popsicles, depending on your mold. I grew up drinking cold, creamy avocado smoothie with chocolate syrup and sweet condensed milk LOL, that's like so good during our LONG summer. In fact, avocado is my mom's fave dessert. And avocado ice cream (even popsicles) is everywhere, I was so surprised that avocado is used in a dish instead of dessert when I got to US :) And so far I've not yet gotten used to the idea of avocado as part of a dish. I live in the Middle East and there are juice stalls everywhere, they make and avo shake with milk, powdered milk, avo, honey and ice all blended and it is amazing (you can use some spices in it if you like too).
