Try saying that tongue twister three times in a row. The long name brings to mind a delicious and decadent dessert, doesn't it? If you're looking for recipes to make this weekend for St. Patrick's Day then look no further. All week we will be featuring fabulous recipes inspired by Ireland, the color green, and friendly little leprechauns. This time of year I love to use Bailey's Irish Cream liquor to enhance dessert recipes. I can't wait to make this cheesecake, it has an Oreo cookie crust and 1 whole cup of Bailey's! The long name will wow my guests and make it seem like I made an extremely difficult expert level dessert. To look at the recipe,

Bailey's Irish Cream Chocolate Chip Cheesecake
From Recipe Zaar

1/2 cup toasted pecans, cooled and crushed
2 cups chocolate Oreo cookie crumbs
1/4 cup sugar
6 tablespoons melted butter
2 1/4 lbs cream cheese, at room temp
1 2/3 cups sugar
5 eggs, at room temp
1 cup Bailey's original Irish cream
1 tablespoon vanilla
1 cup semi-sweet chocolate chips
Coffee Cream Topping
1 cup chilled whipping cream
2 tablespoons butter
1 teaspoon instant coffee powder
chocolate curls or Skor English toffee bits, for decoration on top

  1. Make crust: Preheat oven to 325°. Mix all ingredients. Press into a 10" spring form pan and up the sides one inch. Bake for 7-10 minute.
  2. Make filling: beat cream cheese with electric mixer until smooth.
  3. Beat sugar in gradually, and then add eggs one at a time. Blend in Bailey's and vanilla.
  4. Sprinkle half of chocolate chips over crust.
  5. Spoon in filling. Sprinkle with remaining chocolate chips.
  6. Bake at 325° approximately 1 hour and 20 minutes or until puffed, springy in center and golden brown. Place a pan of water on bottom rack of oven while baking to keep it moist.
  7. Cool cake completely.
  8. Coffee Cream Topping: beat all ingredients and spread over cooled cake.
  9. Top with chocolate curls or Skor bits.

Make ahead: be sure to make and refrigerate at least one day before serving.

I would omit the nuts and just use more cookie crumbs.

i read that if a nut product is crushed, you can't remove it without affecting the consistency of the crust. my fiance is allergic to nuts so i was wondering if there was a substitution or something?

Oh yeah, I forgot they had the pre-made oreo crust. But I like your idea of not even opening the package til they're crushed! Very creative. I have no will power, hehe :)

I'm not sure if you can get pre crushed oreo cookies, I have never seen them in stores although I have found boxes of crushed graham cracker crumbs. Here is what I suggest you do ccsugar: buy a small package of oreo cookies and stick the entire unopened package in a large plastic baggie. Grab your rolling pin and pound away. Crush those cookies and your desire to eat them. Don't open the package until all the cookies are crushed. If you are still worried about eating the cookies you could always buy a pre-made oreo cookie pie crust.

Partysugar -- Can you buy Oreo's pre-crumbled? Or is that something I'd have to do myself? I'm just worried I'd eat them all before I actually crumbled them up ;)

Brokenbraclet, I'm afraid if you omit the Bailey's you will definitely loose a lot of the flavor of this cheesecake. The recipe calls for 1 cup, that's not a small amount of Baileys. If you are worried about the alcohol content, you might want to use a different cheesecake recipe, like this one for a vanilla cheesecake:

ohhh my lord that looks DELICIOUS. LOVE irish cream, cheesecake and oreo crusts...who could ask for more? when i was in high school, my cafeteria got a coffee machine and every day for study hall i got a small cup of irish cream flavored coffee. i wasted a lot of money on that. ANYWAY i just so happen to have two bottles of bailey's irish cream...however, i am under 21 and it might be a bit awkward to start cooking with some alcohol in my kitchen. looks like i've got to find another kitchen because this is just TOO good to pass up!

Wow, this is definitely a recipe I am going to have to try. How can you go wrong with a food that has Bailey's and cheesecake in it's name?!
