Burrata

Definition: Burrata

Burrata
A mild-flavored Italian cheese made from a mixture of heavy cream and curds. It has a mozzarella skin and runny center. Originally produced in the Italian region of Apulia, burrata is made from water buffalo or pasteurized cow milk. It takes only eight hours to produce from start to finish, with no aging required.


While often served on its own at room temperature, burrata can also be used to replace mozzarella in an unusual caprese salad.

Sometimes I find this cheese a little too mild. I hated it on pizza, and it just had no flavor at all, but I did enjoy the creaminess in a salad.

I loooove this cheese! Here in Italy they make pizza with burrata: just a regular cheese&tomatoes pizza with a whole burrata open in half on top of it. Yummy!!

This is the most delicious cheese to go in a caprese salad! I prefer to dribble the creamy interior on rustic bread, dip it in a bit of olive oil & balsamic vinegar & top with a sweet grape tomato & a basil leaf. I cannot get more excited just thinking about it!
