Certain characters — Jacques Pépin and his daughter, Claudine, come to mind — are mainstays at the Classic. Of those personalities, our favorite is José Andrés (pictured here roasting calcots at his annual Wines from Spain party last year). It's always nice to see a more personal side of the chef (he often brings his daughters with him to the event), and he always introduces us to standby recipes, like this one for gazpacho.
