Chanterelle
A type of edible mushroom with a frilly, funnel like shape. The color ranges from bright yellow to orange, and they can be found in most supermarkets in both dried and fresh forms. Look for plump, spongy mushrooms and avoid those with broken or shriveled caps. It has a somewhat chewy texture and a delicate nutty or fruity flavor that is delicious both alone and worked into a dish.

These mushrooms are incredibly earthy and fragrant, they are hearty as well, and my absolute FAVORITE recipe calls for these lovelies to be stuffed inside of a Chateaubriand with shallots. Divine!

Generally, I like mushrooms, but these kind definitely leave something to be desired! I think that it is the chewy texture that doesn't sit right with me!
