Definition: Chorizo

The other day I posted a picture of chorizo in the Savory Sights group. Some of you wrote in to ask what chorizo was, so for those of you in the dark, here's the definition:


A coarsely ground (or chopped) pork sausage. It is highly seasoned and often obtains its strong red color from paprika and hot peppers (along with chili powder, pimentos or other spices). It is widely used in Spanish and Mexican cooking. However the Mexican version is made with fresh pork, and needs to be cooked, whereas the Spanish version uses smoked pork and can be eaten without cooking. It is usually available in a hot and mild format.

we live very close to the spainish border and the spainish chorizo is SO different it has the smokiest flavor i am hoping i'll get used to it

Pinkgirl, Yup...that's about right. The first time I read the ingredients on a package of chorizo, I remember thinking, 'ew...I can't eat this' but I got over it. It's important to note...Mexican chorizo is very different than Spanish chorizo. Spanish chorizo is more like smoked sausage.

My husband and I bought some chorizo from the supermarket the other day. When we got home, I noticed the ingredients were pork cheek, lymph nodes, and salivatory glands. Is this the ingredients in all chorizo?? If so, I don't think I can bring myself to eat it.
