Come Party With Me: My Half Birthday — Dessert

At all of my parties I like to provide guests with a sweet treat even if it is only a small bite. At my half birthday — besides filling bowls with M&Ms which is signature to all my events — I will make one refreshing dessert: white chocolate and lime cheesecake bars.

Instead of cutting the bars into squares, I'll use a cookie cutter to cut out circles making mini cheesecakes. To emphasis the half theme, I will cut the circles in half and serve mini half cheesecakes! For the recipe,

White Chocolate Lime Cheesecake Bars


  1. 7 ounces high-quality white chocolate (such as Lindt), chopped, plus white chocolate curls (optional garnish)
  2. 27 chocolate sandwich cookies (about 11 ounces)
  3. 2-4 tablespoons melted butter
  4. 1/2 cup chilled whipping cream
  5. 1 8-ounce package cream cheese, room temperature
  6. 3 tablespoons sugar
  7. 3 tablespoons fresh lime juice
  8. 1 tablespoon finely grated lime peel
  9. Lime slices or lime twists (for garnish)


  1. Line 8x8x2-inch square baking pan with foil, extending over all sides.
  2. Stir chopped white chocolate in small metal bowl set over saucepan of barely simmering water until melted and smooth. Remove bowl from over water.
  3. Finely grind cookies in processor. Add 2 tablespoons melted white chocolate and 2 tablespoons melted butter blend until mixture clumps together, adding more melted butter as necessary to create a crust that will hold together.
  4. Firmly press mixture onto bottom of prepared pan. Chill while making filling.
  5. Beat whipping cream in medium bowl until peaks form. Beat cream cheese, sugar, lime juice, and lime peel in large bowl until smooth.
  6. Beat in remaining melted white chocolate. Fold in whipped cream in 2 additions; spread over prepared crust.
  7. Chill until filling is slightly firm, at least 2 hours.
  8. Using foil as aid, lift cheesecake out of pan. Cut into 9 bars. Garnish with chocolate curls, if desired, and lime slices or twists.

Serves 9.

serving bite-size desserts is SUCH a better idea than a whole cake at a party of adults. more people will enjoy it, as many shy away from a big slab of sugar. also a more reasonable portion size for those trying to resist too much temptation.

I was also wondering if sandwich cookies are oreos. The could be quite yummy! But wouldn't it be more of a white chocolate - lime - cookies 'n cream bar?

Liss: I agree with designergirl and would use a chocolate wafer cookie. Kate Marie: I didn't think about the scraps...bring them into the Sugar office I guess! Free food goes really quickly here.

M&M bowls and jars are my mom's signature too. Recipe looks delicious- they probably mean a plain chocolate cookie. I always use Nabisco Famous Chocolate Wafers- they're the best!

TrnSmleShiftRpt: step 5 says you beat the whipping cream therefore turning it into whipped cream. Does that explain it better? Let me know if you need more help!

Quick question about this fabulous looking dessert: Is it whipping cream or whipped cream we are adding? The ingredients says whipping, but the recipie itself says whipped. Just want to know!
