Guacamole was one of the first dishes I ever mastered. I've made it so many times that I rarely follow a recipe. Also, I change it up depending on my mood. Sometimes I'll use a lot of garlic and red onions. Other times I toss in green onions, etc. One thing that remains constant in my guacamole making, however, is the lack of tomatoes. For some reason, I prefer guacamole without tomatoes. How about you?
