Coconut Lime Squares Are an Easy Treat

Recently, I was looking for an uncomplicated make ahead dessert that involved coconut. After searching through a bunch of recipes, I decided on these coconut lime squares. They are easier than other bars because you don't have to chill and roll out the dough, and the lime custard is not heated on the stove. It's a surprisingly simple procedure. The resulting dessert is buttery, tart, and absolutely awesome. They were a total crowd pleaser, and I ended up with only one left to photograph! These squares would be excellent at a Spring picnic. Easy Coconut Lime Square Recipe 2010-03-26 15:45:42


  1. For crust
  2. 3/4 cup plus 2 tablespoons all-purpose flour
  3. 3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
  4. 1/3 cup sweetened flaked coconut, toasted and cooled
  5. 1/4 cup confectioners' sugar
  6. 1/4 teaspoon salt
  7. For custard
  8. 4 large eggs
  9. 1 cup granulated sugar
  10. 1/3 cup all-purpose flour
  11. 1/2 cup plus 2 tablespoons fresh lime juice (from about 5 limes)
  12. 1 tablespoon freshly grated lime zest (from about 2 limes)
  13. 1/3 cup sweetened flaked coconut, toasted and cooled


  1. Make crust: preheat oven to 325°F. and butter and flour an 8-inch square baking pan, knocking out excess flour.
  2. In a bowl blend together with fingertips flour, butter, coconut, confectioners' sugar, and salt until mixture resembles coarse meal. Pat mixture into prepared pan and bake in middle of oven 25 to 30 minutes, or until golden brown.
  3. Reduce oven temperature to 300°F.
  4. Make custard: In a bowl whisk together eggs and granulated sugar until combined well and stir in flour, lime juice, and zest.
  5. Pour mixture over crust and bake in middle of oven 20 minutes. Top custard with coconut and bake 5 to 10 minutes more, or until just set.
  6. Cool confection in pan on a rack and chill 1 hour.

Makes 16 squares.

I love coconut - just not keen on lime or lemon. I like lemonade, mind you, but for some reason, I don't like citrus-type desserts. I love blueberries, mangoes & big black cherries! Yummy! - I have been searching for years to find a recipe for a dessert dough... My mom used to make dessert squares by making a dough, placing it in a pan (square or rectangle), flattening it by hand (1-2 inches thick) to cover entire pan. Sliced cherries & blueberries covered the top, a sprinkling of sugar on top... Oh God - so simple, yet SO GOOD! - I've tried to remake it for years... I just haven't succeeded. Same for these incredible mini cheddar cheese & ham... Well, they weren't a roll or bread dough - more like puff pastry creations that were to die for. - I never wanted to have anything to do with helping my mom when she cooked, or a true appreciation for the time, effort (made from scratch) & love she had for cooking. After she passed away, all her carefully preserved recipes were accidentally lost, & in trying to replicate them... Well, it's just NOT the same. So for people whose moms & grandmothers are still alive - get the family recipes & enjoy learning from her/them. - Believe me, you won't regret it.
