Fast & Easy Dinner: Maple Pork and Sweet Potatoes

Fast & Easy Dinner: Maple Pork and Sweet Potatoes

Sweet flavors pair nicely with pork tenderloin. While the classic pairing is apple sauce, the combination of barbeque sauce and maple syrup work wonderfully too. Cooked together with sweet potatoes, this one dish meal is perfect for a Friday night. No time is spent slaving over the stove because the entire thing bakes in the oven!

Maple Pork and Sweet Potatoes
From Kraft Foods

3/4 cup barbecue sauce
1/3 cup maple syrup
1/4 cup apple cider
2 tsp. chili powder
3/4 tsp. ground cinnamon

1 small onion, thinly sliced
1 pork tenderloin (1 lb.)

  1. Preheat oven to 425°F.
  2. Mix barbecue sauce, syrup, cider, chili powder and cinnamon.
  3. Place potatoes in 13x9-inch baking dish; top with onions. Pour half of the barbecue sauce mixture over potatoes and onions.

Two of my favorite foods! Pork tenderloin is amazing and I could eat sweet potatoes every day. I am going to try this one.

I come from Maple Syrup Land (Quebec is the biggest producer in the world) and for a weird reason, maple pork is one the things I really don't like. Anyway, they do everything with maple syrup around here (beans, eggs, ham, carrots, cake, pie, cookies, sausages, fruits, tea, coffee, yogurt, rabbit, baby back ribs, smoked salmon,...). That's probably the reason why I have trouble eating maple syrup now. I should post some weird maple recipes, could be interesting.
