Fast & Easy Dinner: Mediterranean Grain Salad

A great staple to incorporate into your weekly diet is the grain quinoa. Like couscous, quinoa takes on the flavors of its surrounding ingredients. In this recipe, the quinoa is tossed with crunchy peppers, cool cucumbers, and salty olives. Although cheese is not one of the components, crumbled feta or goat cheese would be delicious stirred in with the vegetables. To experiment with quinoa tonight,

Mediterranean Grain Salad

Ingredients

  1. 1 cup quinoa
  2. 1/3 cup red wine vinegar
  3. 2 tsp. olive oil
  4. 1 medium clove garlic, minced
  5. 1 medium red bell pepper, chopped
  6. 1 medium yellow bell pepper, chopped
  7. 1/2 cup chopped cucumber
  8. 1/4 cup sliced kalamata or other good-quality black olives
  9. 1/4 cup chopped red onion
  10. 1/4 cup chopped fresh parsley

Directions

  1. Cook quinoa according to package directions.
  2. Meanwhile, make dressing: in small bowl, whisk together vinegar, oil and garlic. Season to taste with salt and pepper. Set aside.
  3. In large bowl, combine peppers, cucumber, olives, onion and parsley. Mix well.
  4. Add dressing and toss to coat.
  5. Add quinoa, stir gently but thoroughly to combine. Serve warm or at room temperature.

Serves 4.

I LOVE LOVE LOVE quinoa! We just got a gourmet-type shop in town that carries it. It's delicious for breakfast, lunch, and/or dinner!I concur with Average Jane. I always cook it in some type of stock(2 parts stock to 1 part quinoa). To me, chicken stock is magical with quinoa. I made a salad of quinoa, green onions, celery, cherry tomatoes, and then dressed it with balsamic vinaigrette that I whipped up using olive oil, balsamic vinegar, and brown mustard. It was good that night, but even better after it marinated overnight. It was a nice side dish with my sandwich for lunch.I also enjoy it with a splash of half-and-half or milk and a tad of extra-sharp cheddar cheese. Talk about comfort food!

Quinoa is one of my favorites. I recommend making it with stock instead of water when eating it plain. However, there's one error in the article... Quinoa isn't actually a grain. It's a member of the gooseberry family. Who knew?! Thanks for updating, Sugar!

I bet this would still be good in brown rice. I will have to try it that way. Fit...I do love the taste of Quinoa, but apparently I waso nly meant to try it once! lol

Hahaha! Quinoa upsests my stomach! Go figure! I bought it last year when Fitsugar was touting is healthy properties...now i still have half a box left and don't want to throw it away!

This is just right for dinner tonight! The Armenian cucumbers and bell peppers are coming up big time in my garden, and this will make a light but filling dinner for my husband and I. No fancy olives in the pantry, but I'll just use canned black olives this time around and use the others next time, after I get to the store. :)
