Fast & Easy Dinner: Salmon-Potato Cakes

Using store bought mashed potatoes is a great way to make super quick fish cakes. Mix the potatoes with fresh salmon, bread crumbs, and chopped herbs for a firm, tasty cake. Serve the seared cakes on a bed of salad greens tossed with honey dijon vinaigrette.

Salmon-Potato Cakes


  1. 14 oz. fresh skinless salmon fillets
  2. 2 cups refrigerated sour cream and chive flavored mashed potatoes
  3. 1/2 cup seasoned fine dry bread crumbs
  4. 3 Tbsp. snipped fresh dill
  5. Nonstick cooking spray
  6. 1 5-oz. pkg. mixed salad greens
  7. 1/2 cup bottled Honey-Dijon salad dressing


  1. Rinse and dry salmon. Place in 2-quart square microwave-safe baking dish; cover with vented plastic. Microcook on high (100% power) for 2-1/2 to 3-1/2 minutes or until salmon flakes easily with a fork. Break in pieces.
  2. In bowl combine salmon, potatoes, bread crumbs, and dill.
  3. Form salmon mixture in eight 3-1/2-inch cakes.
  4. Lightly coat a large nonstick skillet with cooking spray. Cook cakes over medium-high heat 3 to 4 minutes on each side, until heated through and browned.
  5. Place salad greens on plates. Top with salmon-potato cakes; serve with salad dressing.

Serves 4.

My Mom just made these for Dad last night, and I was planning on making them for myself tonight! Only we use Grandma's recipe that uses mayo as a binder. And then we ALWAYS eat them with sweet pea pods and mashed taters on the side. Pure comfort food!

Now that Im a master of making mashed potatoes at home, I can't see myself paying extra for storebought mashed potatoes. The fish cakes sound delicious!

my gram would make these when i was a kid and they'd stink up the whole house. i know it's not suppose to be, but salmon is soooo fishy tasting to me.
