Lighter Beef Tacos

Fast, Easy, Healthy Beef Tacos

Ingredients

  1. 1 teaspoon vegetable oil, such as safflower
  2. 1 large onion, chopped
  3. 2 bell peppers (ribs and seeds removed), chopped
  4. 3 garlic cloves, minced
  5. 2 tablespoons tomato paste
  6. 2 teaspoons chili powder
  7. 1 1/2 teaspoons ground cumin
  8. Coarse salt and ground pepper
  9. 3/4 pound ground beef sirloin
  10. 12 soft corn tortillas (6-inch)
  11. Store-bought salsa and shredded iceberg lettuce, for serving

Directions

  1. In a large nonstick skillet, heat oil over medium. Add onion and bell peppers; cook until crisp-tender, 3 to 5 minutes. Add 1 cup water; cook until water has evaporated and vegetables are softened, 3 to 5 minutes.
  2. Add garlic, tomato paste, chili powder, and cumin; season with salt and pepper. Cook, stirring, 1 minute. Add beef. Cook, breaking up meat with a wooden spoon, until no longer pink, about 5 minutes. Season taco filling with salt and pepper. To serve, spoon filling onto tortillas, top with salsa and lettuce, and fold to enclose.

I made this for dinner tonight and it is soooo good! I usually make tacos with the mix in the store and this is so much better! I fried some of the tortillas and that made it even better (tho bad for you but it was good I couldn't resist!) Oh and limelindsey, there was like no excess fat when I cooked the meet. Maybe because its sirloin instead of regular ground beef, so you can make the recipe as listed with no worries.

Just made this for my husband and I. He is so picky and I'm always trying to get him to eat healthier. I used organic beef and veggies, I had some left over chicken so I did a small batch w/ that. It was so good, my husband asked if I would make it again!

Wouldn't it be lighter if you browned the beef in another pan and then poured off the fat? There's no way you'd be able to skim it off this way - and I'd rather eat my fat in cheese form, thank you very much!
