Fattoush Salad

Ingredients
- 1 large cucumber (thin skinned), halved and sliced 1/8 inch thick
1 1/2 cups cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon chili flakes
1/2 cup parsley, roughly chopped
1/4 cup mint, roughly chopped
1 garlic clove, minced
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper, to taste
Directions
- Combine all of the ingredients. Season with salt and pepper. Let it sit for at least 15 minutes before serving.
