The Basics: Garlic Bread

One of the things I love the most about cooking is how you can take a couple of very simple ingredients, say butter, garlic, and bread, and turn them into something absolutely extraordinary.

You may not think that the word extraordinary should be used to describe garlic bread, but when you realize that everyone has their own variation and everyone enjoys eating it, extraordinary is a perfectly fitting word.

There are two essentials to a deliciously crisp and buttery garlic bread. The first is good-quality bread and the second is room-temperature butter. I like to make a paste with butter and garlic before generously slathering it on the bread. For even toasting, I bake it, then broil it. Ingredients

  1. 1/2 stick unsalted butter, at room temperature
  2. 3 large cloves or 5 small cloves garlic, minced
  3. 1 heaping tablespoon fresh parsley, finely chopped
  4. 1 heaping tablespoon finely grated parmesan cheese
  5. salt and freshly ground pepper
  6. 1 small baguette, split down the middle

Directions

  1. Preheat the oven to 375°F.
  2. In a small bowl, combine the butter, garlic, parsley, and cheese. Season with salt and pepper. Stir to combine until the mixture is thick and pastelike.
  3. Spread evenly and generously on each side of the split baguette. Place on a baking sheet or piece of foil and bake for 12-15 minutes until bread is crisp and toasted.
  4. Turn the oven to broil and broil the bread for 1-2 minutes until the top is browned and bubbling.
  5. Slice and enjoy immediately.

Serves 2.

I'm not a huge garlic fan but I do garlic infused olive oil brushed over bread with a pastry brush (I do mine without much actual garlic but you can heap the garlic on if you like it). Then sprinkle it with fresh basil, a little pepper and parm.

I like to roast a bunch of garlic cloves in a baking dish with some olive oil and butter, for about 40 minutes. I then brush the butter/olive oil mixture on some baguettes, top with a sprinkle of cheese and bake in the oven. You can't imagine how much garlic flavor gets infused into the olive oil and butter. Plus, I then used the roasted garlic in all kinds of recipes. So I get a two for the price of one.

I's Katie Sweeney too! My recipe is like this but I kind of mash the garlic and sometimes i add olive oil.

whoops, forgot to say my method. It's just the basic kind. Butter on bread, sprinkle garlic on top, bake for a little and then broil. I like the idea of mixing the ingredients before spreading it tho. I have to try that. I remember as a child being very excited for garlic bread when my mom would make it and my sisters and I would fight over the butt end which always seemed to be the crunchiest part :)
