Grilled Garlic-Balsamic Carrots

Can you believe that Labor Day is almost here? That means it's time to get together with family and friends to enjoy the last days of Summer. What better way to say farewell to Summer than to fire up the grill and make your favorite barbecue recipes for your loved ones?

You can be sure that this Labor Day our family will be eating these grilled rainbow carrots. They're a perfect side dish to cook along with whatever else you happen to be barbecuing, whether it's a big juicy steak or a delicate salmon filet. The kids love the fun colors of the heirloom carrots, and the grown-ups love the sophisticated flavor of the garlic balsamic vinaigrette.

Grilled Garlic-Balsamic Carrots

1 tablespoon olive oil
1 tablespoon balsamic vinegar
1/8 teaspoon salt
1 clove garlic, crushed
1 pound heirloom rainbow carrots


  1. Make the vinaigrette by mixing olive oil, balsamic vinegar, salt and garlic in a small bowl.
  2. Place carrots on a barbecue over medium heat and brush them with the balsamic vinaigrette mixture. 
  3. Grill carrots for about 20 minutes, until tender, turning them halfway through and brushing them with the vinaigrette several times during cooking.
  4. Remove from grill and transfer them to a serving plate. Brush them with remaining vinaigrette before serving.

Makes approximately 4 side servings.
