Grilled Peach Salad With Goat Cheese

Grilled Peach Salad With Goat Cheese

Ingredients

  1. For salad:
    3 peaches, pits removed and sliced in half
    Olive oil, for drizzling
    Salt and freshly ground black pepper
    6 cups mixed greens
    1/2 cup snap peas, sliced on the diagonal into 1-inch pieces
    3 scallions, sliced on the diagonal into 1-inch pieces
    1/4 cup, toasted slivered almonds, pistachios, or other nut of your choice
    1 4-ounce package goat cheese
  1. For vinaigrette:
    2 teaspoons Dijon mustard
    2 tablespoons red wine vinegar
    3 tablespoons olive oil
    Salt and freshly ground black pepper

Directions

  1. Heat a grill to medium heat. Place peaches on a cookie sheet and drizzle with olive oil and sprinkle with salt and pepper. Grill peaches until soft and grill marks appear, about 3-4 minutes per side. Remove and let cool.
  2. In a small jar with a lid, combine vinaigrette ingredients. Shake well to emulsify.
  3. On 6 plates, divide greens, snap peas, scallions, and nuts. Top each plate with a grilled peach half and place a dollop (or quenelle) of goat cheese in the center of each peach. Drizzle each plate with vinaigrette and serve immediately.
