Love it - but had Peking-style lamb this weekend for a change. Make it occasionally at home - it's foolproof. Cover duck (or just the legs) in water with a good colouring from soy sauce and the zest and juice from an orange, some cinnamon bark, star anise, couple of cloves and some peppercorns. Bring to boil and simmer for 2 hrs. Leave to cool in the broth. When cold gently remove duck, drain and pat dry. Roast duck for about 1½ hours and the skin will be thin and crispy and it will fall apart for you. Serve with Chinese pancakes spread with a teaspoon of sauce (half and half Hoisin and plum sauce) and matchsticks of cucumber and spring onion. Yum, yum, yummity yum!

I need to sometime. Whenever I eat duck I think "Note to self: this is the best meat ever." But I think that with a lot of other meats too.

My family used to get Peking duck for New Year's Eve every year. If the good Chinese restaurant in town didn't require 24 hours notice for the dish, I'd order some tonight!

It's very difficult to get good Peking duck in the States but San Francisco, NY, and Seattle have some places that serve delicious Peking duck. The skin has to be crispy else it's really just roast duck. OMG I'm hungry.
