On today's episode of Ingrid Dishes, Ingrid Nilsen shares her recipe for coconut-mango rice pudding. This recipe was inspired by Ingrid's Thai heritage and includes her own twist on traditional sticky rice with mango.

Coconut Mango Rice Pudding


  1. 1 cup canned coconut milk
  2. 1 tablespoon honey
  3. 1 cup cooked brown rice
  4. 1 mango
  5. Cinnamon, to taste


  1. Add the coconut milk to a small pot and simmer over medium-low heat. Stir in honey until nicely combined. Add rice and continue stirring. Let the mixture simmer for about 5-10 minutes, or until it becomes noticeably thicker.
  2. Transfer to a bowl. Serve with fresh mango slices, and sprinkle with cinnamon.
