the secret to shucking an oyster at a roast is by finding the cutest guy to open them for you :P I can open my own but I mush prefer a man to open them for me. they are messy but yummy! I can't do raw though. Oyster stew is my fave!!

Living in the SF Bay Area, you can make a quick(ish) trek north to the Hog Island Oyster Co. or one of the other oyster farms up in Tomales Bay, and they'll give you a quickie tutorial before they load up your tray with a batch.

Nothing's better than a tray full of kumamotos with some homemade mignonette sauce, freshly shucked, right by the bay. NUM NUM!

A piece of folk wisdom concerning oysters is that they are best to eat in months containing the letter r, as illustrated by the famous phrase: "oysters 'r' in season." This is because oysters spawn in the warmer months, from roughly May to August in the Northern Hemisphere, and their flavor when eaten raw can be somewhat watery and bland during spawning season; additionally their meats are much reduced in size. Oysters from the Gulf of Mexico spawn throughout the year, but are delicious cooked or raw to the oyster connoisseur You can eat them throughout the year.

Oysters make me hurl. And it's not because I don't like them... The last 2 times I had them..well, let's just say it wasn't pretty. Now I'm afraid of them!

Those look delicious, but I thought oyster season was over? I don't think May has an "r" in it!
