Build Your Own Japanese Pantry

Shichimi togarashi ($24 for 10) is nearly as common a table-top fixture in Japanese homes and restaurants as salt and pepper are here. Add a dash of this seven-spice blend (the usual suspects are ground chili pepper, Sichuan pepper, orange peel, black-and-white sesame seeds, nori, ginger, and hemp seed) to whatever tickles your fancy, or for something less traditional, sprinkle it over miso kale chips for subtle heat.
