It's Summer, which means that it's ketchup's time to shine. Burgers, hot dogs, and steaks love this top-selling condiment (it's actually No. 3 in the US, after mayo and salsa). But with a few easy tweaks, you can make a sauce that has a life beyond the backyard — and can elevate any meal. Added bonus: You control what goes in, rather than accepting mystery ingredient listed on supermarket condiments. Start with an organic ketchup and add spices, herbs, fruit and more for nine gourmet twists on this all-American fixin'.

Indian Spiced

  1. In a small pan, heat canola oil over a medium flame. Add onion and sauté until browned.
  2. Add onions, ketchup, and curry powder to food processor and pulse until combined. Try it on roasted fingerling potatoes.

Bloody Mary

  1. Combine all ingredients in a food processor, and pulse until blended.
  2. Dash it over eggs and home fries.

Mexican

  1. Combine all ingredients in a food processor, and pulse until blended.
  2. Use it to spice up huevos rancheros.

Secret Sauce

  1. In a medium bowl, fold ketchup, brown mustard, and mayonnaise together using a rubber spatula.
  2. Add in cornichons and mix until evenly distributed. Spread it over veggie and beef burgers.

Chipotle Lime

  1. Blend ingredients in a food processor or blender.
  2. Serve alongside sweet potato fries.

Truffled

  1. Pour ketchup and truffle oil into a medium bowl. Whisk until thoroughly combined.
  2. Serve alongside tater tots.

Southern

  1. In a small saucepan over a medium flame, heat canola oil. Add onions and sauté until browned.
  2. Pour onions, ketchup, brown sugar, and liquid smoke into food processor and pulse until onions are mostly (but not completely) pureed.
  3. Spread onto a black bean burger.

Sweet + Sour

  1. Pour all of the ingredients into a medium bowl, and whisk until thoroughly combined.
  2. Spread over the top of cooked meatloaf.

Cherry Pepper

  1. Pour all of the ingredients into a food processor and pulse until smooth.
  2. Use as a glaze for grilled chicken.
