To season the pork, Boetticher adds a mixture of ground spices consisting of salt, black pepper, allspice, cloves, cumin, sweet and smoked paprikas, cayenne, cinnamon, and garlic. In a very large bowl, he stirs together the meat and spices using a hand motion that looks like he's making dough: he kneads the mixture and then punches it down. Because, the spices can get into your finger nails and stick to your hands, the butcher recommends wearing gloves while seasoning the pork.
