Healthy Weeknight Meal?

With more resolutions and less free time than ever, this month I've been all about quick, simple, and nutritious dinner options. While I love experimenting with new ones, there are also a few recipes that I've been making for a long time. In fact, I make them so frequently that I don't even read the recipes! Some of my favorites include a spicy vegetable wrap made with sweet potatoes, chicken-and-olive couscous salad, and homemade chicken tenders served with oven-roasted potatoes. Oh, and how could I forget tofu broccoli stir-fry?

A Piece of Salmon Belly Broiled ATOP a bed of spaghetti squash & green beans or asparagus.... So delicious! I have had it two days in a row now! ha ha!

A big pot o green beans or broccolini sauteed with some olive oil and broccoli with some shaved parmesan and a soup/salad or veggie-type dish.

Stirfry! Packed with a ton of veggies, little to no meat and no rice. I love it!!!!!

spaghetti squash with a sauce made of tomatoes, olive oil, basil, oregano, garlic and onions. so easy and very healthy. Or a veggie stir fry.

Throwing salmon in the oven on a piece of aluminum foil (with lemon, salt, pepper and olive oil), on the side beans with slivered almonds and maybe some potatoes.

Various versions of tacos depending on what I have and what is in season.

My most recent favorite is oven-roasted Yukon Gold potatoes with shallots and herbs, turkey kielbasa, and fresh green beans. Delicious! I dice up the leftover potatoes and use them in breakfast burritos. There are never any green beans left over because they are my favorite!

Mine is peanut noodles with tofu and broccoli. A couple soups are in heavy rotation too.

I like to have a roasted or rotisserie chicken or turkey breast on hand at the beginning of each week, whether homemade or from the deli. From this, I am able to toss together several quick and ever-changing meals over the course of 5-7 days.

Spinach salad with smoked duck breast, dried fruit, and a warm vinaigrette is one of my all-time faves, if I have the duck breast on hand. I also really like the baked potato with brussel sprouts that were posted on yumsugar a while back - it's a new favorite that has been added.

I wouldn't necessarily consider it healthy, but my go-to weeknight meal is pasta with anchovies, shallots, garlic, and parmesan cheese. Decadent and delicious!
