Andrew Rea, the genius YouTube chef who enlightened you to the tastiness of reverse searing a steak [1], is back with another tempting recipe.

Taking a cue from a scene in Louis CK [2]'s show, Louis, where he makes fried chicken, Andrew studied the scene and figured out just how Louis does it! It's a pretty standard recipe, according to the chef, but Louis has one secret that separates his fried chicken from the rest: a lemon juice and egg bath. Andrew suggests this is an ideal alternative to the typical buttermilk brine. Although he admits that most of his recipe was eyeballed (like Louis's), Andrew posted the approximate measurments to Reddit [3] . . . just in time for the return of outdoor parties!
