Make Crepes Like Michael For Mom

When Yum and I chatted with Michael Chiarello last week, he demonstrated crepes - a dish he declared perfect for Mother's Day. First he showed us the best technique for making them by using a nifty little crepe machine and then his assistants brought out platters of crepes for everyone in the audience! We sampled both a savory bbq chicken crepe and a sweet chocolate crepe (both Yum and I favored the savory). To achieve the perfect crepe, Michael recommends straining the batter after mixing the ingredients together in order to get rid of air bubbles and any remaining flour chunks. He also reminded us to cook crepes over a low temperature to keep from burning. And finally, crepes are great for easy entertaining because they can be made the night before and stacked with a piece of wax paper between each crepe layer.

Yeah, for anyone who has not checked out the daring bakers crepe cakes, you really should. You will be amazed! I think yum should join the daring bakers, but I have second thoughts because then she would have less time for us. LMAO!!!

I am also a huge fan of the rounded crepe pans, that was one if the first cooking techniques my mom let me do, perhaps I will whip up some for Mother's Day, good idea!

Mmmmm... my friends Mandi and Jenny used to make these all the time in high school and pile them with all sorts of various goodies- canned pie filling, fresh fruit, chocolate chips with chocolate syrup.... really healthy stuff :)

Can I make a language suggestion for anyone who might ever go to France or Québec and want to order crêpes?? :oops: crêpes are pronounced like this regardless of singular or plural: krep (the e is like the e in the word when) NOT krayps (sounding like the word hay). We don't know what krayps are lol! Just a friendly travel tip, honest! Not picking on anyone or anything like that! This post just reminded me of an encounter I saw at a crêperie with all kinds of nastiness (on the French side) that could have been avoided with proper pronounciation! :D :D :D

OMG i just remembered my mom LOVEEEEEEEEES crepes! and i used to have this crepe maker which had likethis rounded top you dip in you batter, turn over, and wait for it to cook and you peel your crepe off! it was great until you only had a little batter left, can't dip it and so you had to pour it on. if you want a really yummy fun recipe, try the Darkest Chocolate Crepe Cake It's like crepes layered in a hile pile with like a hazelnut filling and chocolate glaze. i saw a bunch of foodblogs who are part of Daring bakers doing it, and it looks nice :P
