Definition: Marrow


Soft, fatty substance that is found in the center of an animal's leg bones, as well as spinal bones. It is considered a delicacy, especially in Europe. It can be cooked in the bone and removed afterwards, or it may be removed first and cooked separately. It can be baked or poached and then spread on toast, or used in soup to add body and flavor.

I have a girlfriend who snaps chicken bones in half so she can suck out the marrow. That's far weirder to me than using it in a soup or on toast.

It's also a delicacy here in the philippines, it's really yummy. it's tasty and thick, a real artery clogger. you add it in stews because it adds a lot of flavor and thickens the soup mixture as well. we eat in dishes called "nilaga", which literally means boiled beef (plus potatoes), and poke that area with our forks to dislodge the content. a lot of countries in asia and europe eat these parts, so that's more people out there than you think.
