The Melt will also cater to vegetarians, vegans, and gluten-intolerant diners. Most combos (with the exception of the Italian Job combo, pictured here) are meat-free. Gluten-free bread is available, and while Kaplan wants to begin offering vegan options, he's busy working on an alternative that includes only all-natural ingredients. The menu will also list nutritional information, with sandwiches ranging from 100 to 300 calories, and combos ranging from 450 to 600 calories.
Once the ABC approves The Melt's liquor license, alcoholic beverages such as wine and beer will be offered in addition to soft drinks. This will include nitrogen-capped wine on tap, cans of beer, and canned sparkling wine (Kaplan named Sofia Blanc de Blanc cans as part of his drink lineup). The reason for the cans? Glass is heavy and difficult to recycle, and Kaplan insists everything in The Melt stores be compostable or recyclable. There is no trash can.
