Definition: Mirepoix

Mirepoix
The French term used to describe a mixture of diced carrots, onions, and celery. Herbs, ham, or bacon can be added to the mix, which is then sautéed in butter. Usually this mixture is a season base for a sauce, soup, or stew. It's also used as a bed to braise meat and fish.

juliegal, I'm pretty sure it is meer-pwah; I learned this in commercial cooking, and I'm also from a French speaking country, so my French isn't too shabby.

I always wondered what the heck this was when I would hear the cheftestants refer to it on Top Chef; then I discovered it at TJs, and the mystery was gone. Just good ol' fashioned onion/celery/carrot....sounded so much more, I don't know, fancy-pants.

You can actually buy Mirepoix at Trader Joes! I buy it all the time because it saves me time when I'm making soups.
