You've probably seen or tried a financier, the light French teacake made of brown butter, eggs, flour, almonds, and powdered sugar. Pastry chef William Werner may have turned to the French for the name and concept, but he took it to the next level by creating the cake out of savory items like zucchini and asiago cheese, then splitting it and filling the middle with traditional Vietnamese sandwich ingredients, like country pâté and pickled carrots and daikon. Intermittent sips of the peach tea kept this rich dish easy to eat.
