Recipe Ideas For a Summer Picnic?

Readers, tiaramh needs our help! She recently posted a story in the community inquiring about picnic foods.

She says, "Hi there! I'm in need of suggestions and ideas for no-cook or cold serving foods for an upcoming picnic event. I'd love easy recipes for meat-lovers and vegetarians alike. Thanks in advance!"

I recommend packing a pasta salad — this Mediterranean orzo salad with cherry tomatoes and feta cheese is outstanding — and a make-ahead sandwich. A muffaletta is sure to please carnivores, while a tapenade, roasted vegetable, and fresh mozzarella sandwich will satiate veggie-lovers.

Tiaramh, I don't know about you, but it's wicked hot in these parts, so my mind is pretty focused on cold salads. I posted this recipe in Kitchen Godess a couple years back. It is insanely good! And you don't have to worry about the mayo/potato issue because it contains neither. Just round it out with some crusty bread and fresh fruit and you're done!
