According to one Disney fan who reviewed the potato churro [4], it's similar to a french fry. She wrote, "Think of it as a giant french fry shaped like a churro. Its texture was sorta like a rice cake. Soft to bite into and a little chewy." Yum! For those of us who always prefer salty over sweet, this is basically the dream.
