What's Your Favorite Bean to Cook With?

Today is National Bean Day! Consuming legumes on a regular basis is one of the foundations of a healthy Mediterranean-style diet. Since my culinary resolution is to eat more vegetarian cuisine, I'm cooking lots of beans. My favorites are lentils, garbanzos, and black beans. If I stock my pantry with all three, I can make a wide variety of soups, salads, and sautes.

We eat a LOT of white beans in our house ... I make pasta e fagiole a lot. We also eat a lot of kidney beans and black beans. And I just had garbanzo beans for the first time this week, in a salad, and fell in LOVE!

Can't have Mexican food without Pinto beans!! Love them, garbanzos and kind of crushing on the black beans now. I have all three stocked in my pantry, including lentils and black eyed peas. :)

Yup, I love black and garbanzo beans. I do like eating lentils, but somehow I rarely have them in my house. I need to change that.

Tough one. Probably pinto beans and great northern beans. I love their creaminess, and the fact that their skins aren't too thick.
