Profiterole

Definition: Profiterole

Profiterole
Small, round, French pastries that are served cold. Also know as cream puffs, profiteroles are usually filled with whipped or pastry cream and often are topped with caramel, powdered sugar, or crème anglaise. The puffs are sliced at the top, filled using a pastry bag, and reassembled with the top replaced.

The savory variation of the profiterole is the gougère.

Greatest profiterole experience ever: For two years I sang with a college chapel choir at Oxford which was often asked to sing grace for special dinners in hall. Each time we did, they'd feed us the same poached salmon and cold cuts and salads etc. in one of the smaller common areas, and would always finish up with profiteroles and hot chocolate sauce. They'd also include plenty of wine. One disastrous evening ended with profiteroles and chocolate sauce being splattered about a gorgeous wood-paneled room right out of Brideshead Revisited. I can't even hear the *word* profiterole without recalling those ridiculous evenings and smiling. Sadly, our profiteroles were never filled with anything, but the chocolate sauce was fantastic, both as a foodstuff and as a projectile.
