Reader Recipe: Bacon-Wrapped Jalapeno Thingies

When it comes to bacon and jalapeno, I'm not terribly discriminating. I'm so crazy about both flavors that I can't imagine how any combination of these two foods could taste bad, which is why I love this recipe for bacon-wrapped jalapeno "thingies" that Wren posted in the Kitchen Goddess group. They're jalapenos, they're wrapped in bacon, and they're stuffed with cream cheese. Enough said. Might as well just call them "thingies."

Better yet, these yummy party foods on a stick look relatively easy to make, with just three ingredients and no utensils required. Plus, Wren says they taste great served hot or at room temperature. To see the recipe, which comes from Pioneer Woman, and Wren's step-by-step photos,

Pioneer Woman's Bacon Wrapped Jalapeno Thingies


  1. Fresh jalapenos, 2-3 inches in size
  2. Cream cheese (softened)
  3. Thin, regular bacon, sliced into thirds


Cut jalapenos in half, length-wise. With a spoon, remove seeds and white membrane (the source of the heat; leave a little if you like things HOT).

Smear softened cream cheese into each jalapeno half.

Wrap jalapeno with bacon piece (1/3 slice). Secure by sticking toothpick through the middle (at this point you can freeze them, uncooked, in a Ziploc bag for later use)

Bake on a pan with a rack (I used a cooling rack :shrug: and it worked great) in a 375-degree oven for 20-25 minutes. You don't want the bacon to shrink so much it starts to squeeze the jalapeno. If, after 20 minutes, the bacon doesn't look brown enough, just turn on the broiler for a couple of minutes to finish it off. These are best when the jalapeno still has a bit of a bite to it.

Serve immediately in you want 'em hot, or they're great at room temperature.

Sorry to burst any bubbles, but these are WAY BETTER with goat cheese wrapped in very thinly sliced bacon that any butcher (if you have one nearby, sorry grocery stores don't count) will cut for you.

I make these but add mozzarella or monterey jack cheese to the cream cheese to help hold the cream cheese together. Yum yum!

I use boursin or herbed cream cheese and marinated flank steak, and then I grill them instead of cooking them in the oven. the smoky flavor is unbelievable...

I grow lots of jalpenos and adding cilantro and garlic to the cream cheese is very yummy. Thanks for the Pioneerwoman link. Babycakes1234 & patsgirl - you both eat well, gonna try them both.

I've been making these for years and they are always a hit. The only difference is that in my recipe I use pineapple cream cheese. It's SO good. It's a sweet, salty, spicy combo that people love.

A friend had these at a BBQ and they were great. Of course anything wrapped in bacon is pretty much a slam dunk. Try dates wrapped in bacon for a sweet/salty treat.

OChottie, if you have a Jack In The Box near you, they have jalapeno poppers with cheddar inside, that are fried. They're not homemade, but they're awesome. Especially with some of their house buttermilk sauce. :drool:

I have tried many of Pioneer Woman's recipes. They are tried and true. I haven't had one fail yet. All of them are crowd pleasers. I look forward to trying this one at a gathering.

Hubbin makes a Smoked Bacon Wrapped Jalapeno Popper. He cores them and squirts the cream cheese inside. Then he wraps the bacon around and secures with a toothpick and throws them on the smoker for a couple of hours. It is so worth the wait! Now I'm hungry.
