Reader Recipe: Italian-Style Pasta Salad

I was checking out the Kitchen Goddess group when I came across this salad from Bettyesque. I'm on a bit of a ridiculous olive kick at the moment, and the green and black olives — combined with all the yummy stuff like artichoke hearts and sopressata — just sounded so divine. Italian Pasta Salad


  1. 2 lbs. of tri-colored pasta
  2. 12 oz. of chopped black olives
  3. 16 oz. of green olives
  4. 6 oz. of marinated pimentos
  5. 6 oz. of marinated artichoke hearts — chopped
  6. 1 stick of sopressata — sliced
  7. 1 stick of pepperoni — sliced
  8. 1/2 lb of fresh mozzarella or provolone depending on your taste - cubes or balls
  9. 1/2 cup of extra virgin olive oil
  10. 1/2 cup of vinegar balsamic or regular
  11. Italian seasonings to taste
  12. fresh garlic to taste
  13. salt and pepper to taste


Real simple sugars boil your pasta . . . to al dente . . . drain . . . and put in large bowl.

Throw everything above in there . . . mix and your done. :)

I love pastas salad. I think I may make some this weekend. Also if you are not into doing even just this little bit of work, at our grocery stores, they usually either have containers of already made antipasta salad, or an olive bar. You can pick what you want and just mix that with pasta for a REALLY quick salad.

Mmmmm. I'm vegetarian, so I'd remove the meat, add some form of white beans for protein and DEVOUR.

Betty Crocker (I think that's the brand) also makes a pretty good pasta salad that you just boil and add their seasoning. I think it's called Suddenly Salad. I usually find it near the Mac & Cheese at my grocery store. I add olives and tomatoes, but I'm thinking about adding some of the yummy goodness from above too.

This looks great--especially going into spring. Portable for a picnic. I'd mix both mozz and provolone, I think.
