Recipe For Lower Alabama Caviar (Black-Eyed Pea Salsa)

Black-Eyed Pea "Caviar" Is a Deep-South Delicacy

Don't let the name fool you: this "LA Caviar" is neither from Los Angeles nor made from caviar. Rather, the "LA" stands for "Lower Alabama," the coastal corner of Alabama that's home to Lulu's at Homeport Marina, a beachside restaurant owned by Jimmy Buffett's sister, Lucy Buffett. I borrowed this recipe from a Southern friend a few years back, and it's since become one of my favorite easy and healthy dips to whip up for parties.

Similar to a salsa, this chunky bean salad gets its tang from tomatoes and bell peppers, a touch of earthiness from the peas, and a delightful sweetness thanks to balsamic vinegar and sugar. To learn more and get the recipe,

This dip is delicious on tortilla chips or crackers — I love to serve it with seeded flatbreads. It's a satisfying Summer dish, and since black-eyed peas are a good-luck food in the South, this makes a great New Year's Eve nibble, too.

Lulu's LA (Lower Alabama) Caviar

Recipe For Lower Alabama Caviar (Black-Eyed Pea Salsa)

Ingredients

  1. 3 (15-ounce) cans black-eyed peas, rinsed and drained
  2. 1/4 cup chopped red onion
  3. 3 tablespoons chopped green bell pepper
  4. 3 tablespoons chopped red bell pepper
  5. 3 tablespoons chopped yellow bell pepper
  6. 1/2 cup quartered cherry tomatoes
  7. 1/4 cup chopped parsley
  8. 1/4 cup balsamic vinegar
  9. 1/4 cup olive oil
  10. 2 tablespoons granulated sugar
  11. Salt and pepper

Directions

  1. Combine black-eyed peas, onion, peppers, tomatoes, parsley, vinegar, oil and sugar
  2. Season with salt and pepper.
  3. Marinate for 12 to 24 hours before serving.
  4. Serve with crackers or tortilla chips.

Serves 10.

Per serving: 203 calories, 8 grams protein, 27 grams carbohydrates, 6 grams fiber, 8 grams fat (1 gram saturated), no cholesterol, 279 milligrams sodium.

YumSugar, I am so glad that you know about one of the most amazing places this side of the Mason Dixon! Lulu's is so mm mm mm good. It's the best sweet tea I've ever tasted and the fried green tomato blt could just send me to heaven now! The recipe you've posted sounds so delicious. I love black-eyed peas...good thing or I would have starved in my parents house. I'll definately have to give this recipe a whirl.

Yeah the one I do is similar to what vegesquire mentioned, I do diced tomatoes (sometimes I used a can of rotel), black beans, corn and italian dressing. It is wonderful and people always love it and are so impressed that I kind of hate to tell them how simple it is!

A variation on this is my friends party/potluck go-to dish, and it's always the first thing that people devour. She uses a simple dressing of bottled italian dressing and lime juice and adds avocado & corn. She serves it with tortilla chip scoops. It's a favorite :)
